Given the recent conclusion of the America's cup regattas, I found this video very interesting:
It provides some indications on why, for example, the ac75 "honest" (please excuse the unprofessional term) over the surface or, because, after thousands of years sailing with the keel immersed in the water, now it has become more common to immerse only of the foil .
