do you know what software is used for these areas?

I did a google search and I saw that it is about mesh and surfaces, but the surfaces don't seem to me that "traditional" but they look more like the one that generates maya, someone knows if it is so?

It is necessary to see what purpose it refers to, in any case there are specific programs for organic design see rhinoceros for example. but in the case of the human body makehuman is a free program, which allows to draw the human body in whole, with a database organized by type and human race.

where I worked before using unigraphics, to model hip prostheses and hip bone-muscular system. I know that it's also used pro/e. in any case I think they are necessary solid but very strong modelers also in the surface field.
this obviously if we are designing prostheses or similar. If we're designing a dentist's chair or a plasmapheresis machine, I think it's okay with any mechanical cad.
