I'm trying to figure out what you have to do.
If you put the food on it and then it's a loft that passes it over with the trucks it's clear that it crushes. therefore you must assess whether the compression resistance of the material you choose and greater or equal to the necessary.
But I don't know things you're doing so you have to calculate yourself, or give the forum greater impt to reason on it.

Finally I did not understand what kind of withdrawal you refer to. If you talk about the withdrawal of cement after drying, I can say that a reduction is there.
I make a random hypothesis, if a 30 cm loft fills it all with cement I will have a cetto withdrawal. if a loft do it with 20 cm of dry allegeration layer + 10 cm of cement over the withdrawal will be less. But I can't tell you how much it can affect. but also here to reason better need to know more precisely your needs.
