how to print in monochrome but with color logo

I have searched here and on the net but I have found no answer.. .
in the design use insert some colors, in the quotas and lines used in the representation.
in print I love to use monochrome to have everything in black on white background.
I need to understand how to have only the logo of the company present in the cart.
