I have seen that there are on the market gas springs that have a manual mechanical block that drives turning a wreath that blocks the stem.
Can you tell me how this block works?

I've never seen one, but if you put a photo, a link or something, we can see better. If the locking is at a certain point, it means that there is a notch on the stem. otherwise if it is possible to lock it in any position it means that the wreath goes to press a conical rubber pad that under pressure of the wreath is tightened around the stem. There could be other plausible solutions.

I looked at the vapsint site and found two products that could be the ones you're talking about:

the "gas top", but it seems to me to be a hydraulic block:
