I do so often, and the motivations are different. often it is easier to work on the top in solid modeling or surfaces, and then convert to the end. In some cases, particularly intricate, the thickness is a heavy burden to be carried back, better to work on surfaces and add the thickness only at the end, when the final shape is reached.basically you cannot expect to do with the command converts to sheet metal, which processes in its own way, what you can do with the dedicated tools.
