is it possible in assembly environment to go to cut one part with another part (or better, for example, with a plane of a surface that belongs to another part? ? )

cavity removes a reference part from a contextual change.
If you need to do an offset by changing part of what you need to cut selections of the surface that interests you on the other side and do the offset
