assorted questions: doubts during the beginning of a project

I am for the first time starting to make a serious project, contrary to the various "specific" tests that I have done so far to verify behaviors of the software and put into operation teachings of the manual.
I would like to carry out with revit.

during the design of the planimetries and the first tests with prospectives and sections, I have found some difficulties that I list:

1. how do I make a roof at a time (with the central part corresponding to the highest point and the lowest perimeter) ?
2. I can hide a level in prospectuses and sections?
3. how do I make it "topic surface", seen in the prospectus, create a net like that when it is dissected?
4. some doors of this house have shutters that if opened at the same time they bang one on the other. being so close, revit represents them both open with a bad effect of overlap between the two shutters. How can I do to make a window open and the other closed?
5. I have to create two families of Persians ("100x140 cm closed Persian" and "100x140 cm open Persian") ?

Yeah, but don't make a roof?
If to say the roof is sometimes located on the ground floor and above there is another floor, I should make a "solar for extrusion". If not I see the floor with the tiles:d

but this is a bullshit of revit, there should be many more "parameters of instance", a little like on archicad... :

I wanted to make a lone at "time", or rather say twice that they intersect.
place a design to better understand:

With that last sentence I was only referring to the fact of the windows, for the rest all right

Here is the same address as width/height as an instance parameter. but the point is that practically all families, starting from those "official" do not include virtually any instance parameter.
do you know families that include instance parameters for shutters (open/closed) and maybe for size?
