I can't change the material of a sliding door. .There is not even the "material" parameter in the tab! I can only change the frame material... why?

probably the family of doors you use does not contain the parameter of the "material" relative to the door.
you have to open the family by family modification, from a view (better than 3d) select the extrusion of the "pannello" of the door, from the element properties, in the material section and finishings (frame to dx) assigns a parameter of material type.
