in revit cé little and what there are unused models.

Hello and welcome.
I'm afraid you'll have to build them like this:
1) family of "general metric model";
2) generic model change to "mechanical equipment" or " ...special".
If you already own the model in another format you can always import it into the family in dwg, dxf, sat acis or others.

What do you mean by category change?

Is it a good idea to import objects from other formats? other perosnes on other forums told me that it is a dare that must be avoided absolutely because from a lot of problems... Besides if I amount an autocad file it matters to me as block and I can't change the material... and how do I have for example evaporators for which there are 30 different models? Do I have to have 30 families or can I somehow import them all into the same and choose the desired model?

depends on the family and how it is generated/managed.

I imported a dwg file into the drawing but I can't change the material!

What can it depend on? the material applies it, if I close the project and reopen it I see the material listed as I put it, but in the view I see the color I used in autocad. and the rendering idem..

how is it managed/generated? How am I supposed to do that?
