In practice, I would like to model components with polygonal appearance such as the horse below. my question is, if I start from a normal 3d parametric, for example a semisphere, there is a way to "approach" it with a polygonal mesh with solidworks (or with other programs, I don't mind learning more)

in solidwrks you have two roads:
make the model with polygonal surfaces or bodies
make the model with curved surfaces or bodies and drastically lower the graphics quality so that it turns everything into polygons, it will still be just a graphic issue to video.

you could try to convert to stl the 3d model you created. in nx there are conversion parameters to be set before saving stl but I think there are also in solidworks. use the least detailed one and you should have something similar to the horse but you cannot decide how and where to put the edges. But then the stl file don't know if you have to hold it like this or you can convert it into another format without losing your face.
 
I would use the complex shape and put points and lines where I prefer, then close the surfaces.
