symbols quotations levels and grids

I'm moving my first steps on revit structure and already I can't solve a problem. when I go to create grids or levels do not appear and I cannot put references with letters/numbers (for grids), values and text (for levels). going to the properties, in the symbols box, there is no list with the various types of symbols to use. I press that time ago I had tried the 2016 version and had not found this kind of problem, I also looked for videos that explain how to do but it seems that in my 2015 version it does not work (e.g. click twice at the end of the grid line to edit the text box).
Do I charge families with symbols for grids and levels?

Bingo! However in the curtain I can't choose anything and if I go on browse it addresses me in the documents where in the autodesk folders there is no selectable file. What to do?

thank you so much tristan! I loaded the construction-defaultmetric and I solved. what difference are there with the defaultmetric, the structural analysis-defaultmetric and the systems-default_metric?
Am I going off topic?

the main differences are in the units of measurement, loaded families, system family types settings, view settings and more
